Who is Nibbs Chocolates and Desserts?
Nibbs Chocolates and Desserts is an artisanal chocolate pop up shop specializing in chocolate bonbons. Locally owned and operated at the Kitchen Council by partners Lindy and Jeff. Lindy moved to Omaha to attended culinary school at Metropolitan Community College where she studied baking and pastry arts, and later made her way into the fine dining industry where she was the pastry chef at Au Courant Regional Kitchen, as well as V. Mertz. Out of all of her pastry experience she enjoyed working with chocolate the most. Lindy decided to venture into turning her passion into a small business and founded Nibbs Chocolates in November 2021.
What is a bonbon?
A bonbon is a bite-sized confection that consists of a thin tempered chocolate shell and a variety of fillings ranging from ganaches and caramels, to fruit and nut based components. Bonbons are different from truffles, which are often hand rolled ganaches dusted with cocoa powder or nuts, and are created using polycarbonate molds.
